Ingredients

  • 1½ cups fresh or frozen pitted sour tart cherries
  • 4 cups unsweetened coconut milk yogurt
  • 1 cup sour cherries, pitted (fresh or frozen) plus ½ cup for topping
  • 1½ tsp pure vanilla extract
  • ½ cup raw honey

Instructions

    Set aside ½ cup of the cherries for topping. Place the remaining 1 cup in a food processor with the coconut yogurt, vanilla, and honey. Pulse until smooth.

    Pour the mixture into a freezer-safe glass or plastic container, cover, and freeze for about 1 hour. Remove from the freezer, scoop and stir to break up any iciness, then top with the reserved ½ cup whole sour cherries. Return to the freezer.

    Let set for 3 to 4 hours, then scoop into bowls and savor each refreshing spoonful!
