Ingredients

  • ½ cup canned unsweetened full-fat coconut milk
  • ½ cup plus 2 tbsp natural creamy peanut butter ((or sunflower seed butter for nut-free))
  • 2 tbsp raw coconut oil
  • 2 tsp granulated stevia or monkfruit sweetener
  • 1 tsp pure vanilla extract
  • ¼ tsp Himalayan pink salt
  • 3 cups quick-cooking oats
  • ½ cup no-sugar-added dark chocolate chips

Instructions

    Line a baking sheet with parchment, wax paper, or a silicone mat.

    In a large bowl, whisk coconut milk, ½ cup peanut butter, and ½ cup water until smooth. Stir in coconut oil, sweetener, vanilla, and salt.

    Fold in oats and let sit 10 minutes to firm up, then mix in chocolate chips.

    Scoop onto the sheet, flatten slightly, and drizzle with a mix of the remaining 2 tbsp peanut butter and ½ tsp water.
