Ingredients

  • Nonstick olive or coconut oil cooking spray
  • 1½ cups uncooked red or white quinoa
  • ½ tsp sea salt
  • ½ cup egg whites
  • ⅓ cup unsweetened full-fat canned coconut milk
  • 1 tsp granulated stevia
  • 1 tsp pure vanilla extract
  • 1 tbsp ground cinnamon
  • 4 pitted dates ((finely diced))
  • 1 medium apple ((cored and finely diced))
  • 2 tbsp plus 2 teaspoons natural almond butter ((or sunflower seed butter for a nut-free option))

    Preheat oven to 375°F and spray an 8x8-inch baking dish with nonstick cooking spray.

    Cook quinoa: Bring 3 cups of water to a boil with ½ teaspoon salt. Add quinoa and simmer 20 minutes, until water is absorbed. Let cool slightly.

    Mix wet ingredients: In a small bowl, whisk egg whites, coconut milk, stevia, vanilla, and cinnamon.

    Combine and bake: Stir the egg mixture into the quinoa with apples and dates. Spread evenly in the dish and bake 20–25 minutes, until set and golden.
