Ingredients

  • 1 cup packed fresh basil
  • 1 tsp raw unfiltered apple cider vinegar
  • 4 oz jarred roasted red peppers ((drained))
  • ½ tsp lemon zest
  • Juice of 1 fresh lemon plus ½ teaspoon lemon zest
  • 2 tbsp pine nuts
  • 1 fresh garlic clove
  • ½ tsp sea salt
  • ½ tsp freshly ground black pepper
  • 2 tbsp extra-virgin olive oil

Instructions

    Place all ingredients except the olive oil into a food processor and pulse until smooth.

    Add the olive oil slowly through the feed tube while the motor runs, processing until creamy—about 30 seconds.

    Toss with spiralized squash noodles, fresh veggies, or grilled chicken and seafood. Store any extra pesto in an airtight glass jar for up to 14 days.
