Ingredients

  • 1 large red bell pepper
  • 1 cup grape tomatoes
  • 2 garlic cloves
  • ¼ cup pine nuts ((blanched almonds work too))
  • 1 tsp smoked paprika
  • ½ tsp ground cumin
  • ¼ tsp sea salt
  • 2 tsp extra-virgin olive oil

Instructions

    Heat & char: Preheat broiler or grill to medium-high. Remove seeds from the bell pepper. Broil or grill the bell pepper, tomatoes, and garlic until blistered and soft.

    Blend: Transfer veggies to a food processor. Add smoked paprika, cumin, salt, and olive oil. Process until smooth.

    Add nuts: Pulse in pine nuts (or almonds) until just combined, leaving a bit of texture.

    Store & serve: Keep in a sealed container in the fridge for up to 10 days. Use on veggie noodles, proteins, or as a dip.
