Ingredients

  • 1 package of Simply Delish Salted Caramel pudding (or your choice of flavor)
  • 60 grams of whey protein powder
  • 1 cup of plain nonfat Greek yogurt
  • 1/2 cup of AP gluten-free flour
  • 2 cups of water
  • 1/2 teaspoon of baking powder
  • 1 tablespoon of coconut oil
  • 1 extra-large egg

Instructions

    Prep: In a large mixing bowl, blend all the ingredients until smooth. The batter will be firmer than usual pancake batter due to the pudding.

    Cook: Over medium heat, spray skillet or griddle with non-stick cooking spray.  Spoon mixture onto cooking surface (it will be firmer than you’re used to - that’s because of the pudding)  Cook for one minute than flip and cook until golden.  Inside of pancake will have a delicious, pudding-y interior!
