Ingredients

  • 2 cups shredded or chopped leftover turkey
  • 1 tbsp olive oil ((or avocado oil))
  • 1 medium onion ((diced))
  • 2 cloves garlic ((minced))
  • 2 cups mixed vegetables ((peas, carrots, green beans, or zucchini))
  • 1 cup mushrooms, sliced ((optional but adds umami))
  • 1 tbsp tomato paste
  • 1 tsp ground thyme
  • 1 tsp smoked paprika
  • ½ tsp sea salt ((+ ½ tsp black pepper))
  • 1 cup low-sodium broth ((chicken or veggie))
  • 1 tbsp arrowroot or cornstarch ((to thicken))
  • A sprinkle of Superfood Sprinkle
  • 2 cups leftover mashed potatoes
  • ¼–½ cup broth ((to loosen))
  • ¼ cup Greek yogurt ((or Greek yogurt cream cheese))
  • Salt and pepper to taste
  • Optional: chopped herbs or a dust of paprika

Instructions

    Preheat oven to 400°F.

    Heat oil in a skillet. Add onion, garlic, and mushrooms; cook 3–4 minutes until softened.

    Add veggies, turkey, tomato paste, thyme, paprika, salt + pepper. Mix well.

    Stir cornstarch into broth, then pour it in. Let it simmer 3–5 minutes until it thickens slightly.

    Taste and season. Add a shake of Superfood Sprinkle for bonus minerals + umami.

    Spread the filling into an oven-safe dish.

    In a bowl, mix mashed potatoes with broth and Greek yogurt until creamy but spreadable. Season.

    Spread over the top of the turkey mixture. Don’t worry if it’s rustic—rustic is sexy.

    Bake 20 minutes until the top is lightly golden and edges bubble.
