Ingredients

  • 4 zucchini ((sliced into thin sheets with a mandolin or veggie peeler))
  • ¼ cup plus 2 tablespoons The Real Dish Dressing
  • 1 cup arugula
  • ¼ cup grape tomatoes ((sliced))
  • ¼ cup grated Pecorino Romano cheese
  • ¼ cup plus 2 tablespoons Real Dish Dressing ((separated))
  • Freshly ground black pepper

Instructions

  1. 1
Marinate the zucchini: Place the zucchini slices in a shallow dish and pour over ¼ cup of Real Dish Dressing. Let them soak up the flavor for at least 30 minutes, or up to 2 hours.
  2. 2
Create the stack: On a large plate, arrange a layer of zucchini strips. Add a second layer perpendicular to the first, forming a fun basket-weave pattern. Voilà—a veggie masterpiece!
  3. 3
Toss the greens: In a small bowl, toss the arugula and tomatoes with the remaining 2 tablespoons of dressing.
  4. 4
Assemble and serve: Pile the arugula and tomatoes atop the zucchini carpaccio. Finish with grated Pecorino and a sprinkle of freshly ground black pepper.
Note: Adjust spices to taste. Enjoy your meal!
